8 Coloured Mini Peppers(seeded diced)
3 Persian Cucumbers (diced)
4 Tablespoon chopped Italian Parsley
1⁄2 cup pitted Black Olives cut in halves
8 Cherry Tomatoes cut in halves
1 Fresh Lime
1⁄2 Anjou Pear( seeded diced)
1⁄4 cup chopped dill
For the Dressing:
1⁄4 cup extra virgin olive oil
1 freshly squeezed lime juice
1⁄2 cup juice of an orange
1 teaspoon sugar
Salt & black pepper to taste
Transfer the vegetables to a mixing bowl.
Stir in the parsley, cherry tomatoes, pears and refrigerate.
To make the dressing combine all the ingredients in a small bowl and whisk together.
Pour the dressing onto the salad.
Season with salt and black pepper.
Toss well to combine, transfer to a salad plate, garnish with chopped dill and serve cold.
