1 Large Beet
1 Bunch Cilantro
1 Large Avocado
1 Fresh Lime
¼ cup extra Virgin Olive Oil
1 Chopped Cilantro
1 Freshly Squeezed Lime
Sea salt and Smoked Paprika to taste
Peel the beet and cut it into thin long strips of about 1 inch. Finely dice the zucchini, slice the avocado and add all these ingredients in a mixing bowl and refrigerate.
Whisk extra virgin olive oil and freshly squeezed lime with 1 teaspoon sugar and add a dash of smoked paprika and sea salt to taste.
Pour the dressing onto the salad and serve cold garnished with chopped cilantro.
